Q: Can the bottom of the plastic bolt be shortened to accomodate a shallow pan and cut the AC off sooner?

No because of the magnetic “read “ switch in the unit, I tried doing that for one of my projects and it broke and didn’t work.

Q: Would this shut off a 120v pump? If so, is there a 3 prong plug outlet or would the pump have to be wired in?

This has to be wired in and used for 24v not 120v.
