Chitosan is like a dietary fiber and a non-digestible amino polysaccharide derived from the shells of crustaceans that have been shown in non-clinical studies to bind to fat and cholesterol in the digestive tract. Chitosan is synthesized by removing acetyl groups from chitin, through a process called deacetylation.
