A complete ready to use base mix for the production of wholemeal bread and rolls. Made in the UK. Packaged in plastic free, recylable FSC paperbags. Each 12kg catering bag of the base mix requires 8.4kg of water for the recipe. Alternatively, for a smaller recipe, using 3kg of the base mix requires 2.1kg of water. - Place the base mix into a machine bowl with the required amount of water. Mix together to form a well developed dough. Suggested Mixing Times: - Spiral Mixer: 2 minutes slow, 6 minutes fast - Vertical Mixer: 2 minutes slow, 8-10 minutes medium - High Speed: 2-2:30 minutes Rest dough for 5 minutes prior to scaling into desired size and hand up. Rest for a further 10-15 minutes prior to moulding into shape as desired. Prove for 45-60 minutes depending upon size of dough piece and proving conditions. Bake as normal, 30 minutes for a loaf, 15 minutes for rolls.
